The cabbage, fleshy and wrinkled, flattened in shape, could serve as a metaphor for the rusticity of Portugal, a country Bordallo satirized so often. It was a clever way of paying homage to it, placing it at the center of bourgeois tables, where, otherwise, it would not have been invited. And today, our cabbage is an essential element on any table and in any setting, admired by young and old alike, blooming in various colors: Green, White, and Pink!
